A few weeks ago we had a small dinner party. As the main dish we planned to serve chicken tetrazzini. The recipe calls for cubed, cooked chicken. Usually we have a roast chicken one night and the next night we’ll use the leftovers for the tetrazzini. That wasn’t in the cards this time. As an alternative we poached chicken breasts in the slow cooker.
Slow Cooker Chicken Breasts
7 pounds frozen boneless, skinless chicken breasts
2 Cups water with 2 chicken bouillon cubes dissolved in it
Put this in your slow cooker and cook on low for 6 to 8 hours. Be sure to check the chicken with your meat thermometer just to make sure it’s done.
