Recently I made a small batch of tomato jam in my bread machine. I’ve been looking for ways to use it ever since. Last night I saw another opportunity. I was roasting a chicken for dinner. In the last half hour of cooking I coated the chicken with a glaze made of 4 tablespoons of tomato jam and 2 tablespoons of apple cider vinegar. It added a nice bit of flavor to the chicken.
Tonight we’ll be making sandwiches with the leftover chicken and we’ll use the tomato jam as a secret sauce. I’ll let you know how it turns out.
